Is there a difference between a cupcake & a muffin? I had leftover blueberries that were threatening to rot on me if I didnt eat/use it in the next 2 days so I figured that I’d bake a blueberry cupcake instead and used a muffin recipe and just took out abit of the wet ingredients (butter, milk).
The baking of the cupcakes went off without a hitch. They gave off the delish blueberry scent that was intended and everything was hunky dory.

The frosting on the other hand was a pain! I didn’t have enough icing sugar on hand so I tried to use fine sugar which looks like a decent substitute. Well, NO. In my further attempt to correct the grainy nature of my failed frosting, I did the unthinkable…I cooked it. and this is what it looked like after!

Finally, it looked decent enough for piping!
